Now, everyone and their grandma claims to have the best Lemon Pepper wings in the world. We do not make that claim… but these are pretty flippin’ good. These Lemon Peppah wings are the highlight of any tailgate party or backyard get-together. This recipe utilizes our Lemon Peppah Rub, a crowd favorite, but still uses generic lemon pepper seasoning, so do not throw yours away! These wings pair terrifically with our homemade LP sauce. While new to some, we promise you, try them wet for the best experience. A little goes a long way, so half the sauce recipe if you wish.
Ingredients:
3lbs x Chicken wings
2 TSBP x Mayonnaise
1-2 TBSP x GOOD AZ Lemon Peppah Rub
2 TBSP x Cornstarch
1 x Lemon
Lemon Zest and juice from 1 Lemon (or sub with 1 TBSP Lemon Juice)
1 x Stick of Unsalted Butter
2 TBSP x Generic lemon pepper seasoning (I use Winco’s store brand)
1 TSBP of Honey (or 1 TBSP of Honey Powder)
Instructions
1. Remove wings from pack and pat dry with paper towels.
2. Preheat smoker or oven to 400F.
3. Add wings to large bowel, add mayonnaise to chicken and mix well, or use a different fat source as a binder. I like the neutrality of mayo.
4. Once coated in mayo, season with 1-2 TBSP of GOOD AZ Lemon Peppah Rub, Cornstarch, and mix with your hands until evenly distributed. Seasoning should be equally distributed and visible on the wings.
5. Smoke at 400F for 50-65 minutes, until at least 165 internal. I pull mine when they’re about 175F, which is usually at the 60 minute mark.
6. If using an oven, bake at 400F for 40-50 minutes. Again, looking for a safe internal temperature of at least 165F.
7. While smoking/baking, prepare your sauce by combining the butter, generic lemon pepper seasoning, honey, lemon juice and zest in a small pot.
8. Bring to a simmer, but do not boil.
9. Once your wings are done, transfer them to a tray or mixing bowl.
10. Toss the wings in the LP sauce, plate, and enjoy!
