St. Louis Style Ribs
Everybody loves ribs, and this recipe will ensure everyone continues loving them. A slab of ribs is enough to feed a small crowd, so feel free to double up if you need to. I prefer my ribs not to fall off the bone entirely, but if you do, smoke them a little longer, and you should have your desired finish. Ingredients:
1 x rack of St. Louis Style Ribs
2 TBSP x GOOD AP Rub
2 TBSP x GOOD AZ BBQ Rub
1 TBSP x Honey
1 TBSP x Brown Sugar (light or dark)
2 TBSP x Unsalted Butter
Aluminum Foil as needed
Instructions
1. Trim ribs and remove membrane if you wish.
2. Season with a coat of GOOD AP Rub and a medium coat of GOOD AZ BBQ Rub on both sides.
3. Set on a tray and place in the fridge for 30 mins.
4. Remove and smoke meat side down 2 hours at 275F.
5. Sprinkle with a little water after an hour if needed for moisture.
6. After 2 hours, take off, and prepare your foil.
7. Lay down a bead of honey, 1 TBSP of butter (cut into smaller pieces), add a thin line of brown sugar and dust with rub.
8. Put ribs in foil face side down.
9. Repeat on the backside.
10. Smoke meat side down until 202F internal.
11. Rest for an hour in the cooler meat side down. Vent every 20 minutes.
12. While resting turn smoker up to 325F.
13. Carefully remove from cooler and foil, put meat side down on a wire rack, dust with seasoning, and add to smoke for 5-7 more minutes.
14. Remove, turn over, lightly re-rub, brush top side with sauce and tack up for 5-7 minutes longer.
15. Remove, slice, and enjoy.
